Manchego

Sheep's milk cheese of the La Mancha region of Spain. Aged three to six months with a sweet and nutty flavor.

Mitibleu

Rich, bold and Spicy sheep's milk blue cheese from La Mancha, Spain

Drunken Goat

Semi firm cheese made from goat's milk in Murcia, Spain. Fruity with bright purple rind.

San Simón

Cow's milk cheese from Galicia, Spain. Smoked over Birch wood for mild delicate smokiness.

A kind of salami flavored with fennel seeds, traditionally produced in Tuscany. This one is from San Francisco.

Jamón Serrano

Spain's iconic country ham. Literally translated, serrano means "mountains". Madre from the landrace breed of white pig.

Toscano Salame

Dry Italian salami from Tuscany with large bits of black pepper, fat and garlic

Coppa

Made using the muscle starting at the neck of the hog. It is rubbed with paprika and dry cured.
